Crisp and tender Whole Roasted Cauliflower With Butter Sauce is a beautiful dish to serve to guests but is easy enough to make as a side dish for any meals. It brings out the inherent sweetness of the mighty vegetable.

Ingredients:
  • 1 Head Cauliflower
  • 1 tbsp. Fresh Thyme
  • 2 leaves Bay Leaves
  • 4 cup Vegetable or Chicken Stock, More or Less, Depending on the Size of the Cauliflower
  • 0.3 cup Melted Butter
  • 1 pinch Fresh Cracked Pepper

Preheat your oven to 430ºF / 220°C.

Trim bottom of the cauliflower and remove stem and all leaves, but without breaking it apart. Give it a quick rinse and pat dry.

Place the whole cauliflower in a pot and cover with chicken stock, add fresh thyme and bay leaves. Bring to a boil and simmer for 12 minutes.

Drain and transfer the cauliflower head in a cast-iron skillet or any oven proof pan. Ladle a little of the cooking stock over the cauliflower then drizzle with melted butter on top. Sprinkle with fresh thyme, salt and pepper.

Roast in the oven for 10-15 minutes or until golden. Baste with cooking juice from time to time. Check with a knife, if it slides in easily, then it’s cooked.

Remove from the oven and drizzle with extra buttery cooking juices. Sprinkle italian seasoning, parsley, and parmesan cheese on top. Slice and serve.
