Squid stuffed with succulent potatoes and vegetables and braised in a savory sauce.  It is a splendid addition to any dinner table and delicious.

Ingredients:
  • 1 lb. Squid
  • 0.5 lb. Cooked Potato, meshed
  • 2 oz. Shrimp, coarsely chopped
  • 2 oz. Red Pepper, coarsely chopped
  • 2 oz. Onion, coarsely chopped
  • 1.5 oz. Green pea
  • 0.5 tsp. Salt
  • 0.5 tsp. Black pepper
  • 1 tbsp. Cooking oil
  • 4 piece Bay leaves
  • 0.5 oz. Ginger
  • 1 stick Cinnamon
  • 2 piece Star anise
  • 1 tbsp. Rock candy
  • 3 tbsp. Soy sauce
  • 1 cup Water

For stuffing: in a medium bowl, mesh the cooked potatoes.

Add onion, shrimp, green pea, red pepper, season with salt and pepper and mix to combine.

Stuffing mixture into squid tube.

Leaving a little room at the top, and secure with wooden cocktail sticks.

Heat oil in a large frying pan and add the stuffed squid to cook both sides for 30 seconds each.

Add bay leaves, star anise, cinnamon, ginger, rock candy, soy sauce, cooking wine, and water. Ensure the sauce covers the squid and cook gently.

Simmer for 25 minutes.

To serve, cut squid tubes to 1/2 inch thick pieces.
