Mix all-purpose flour/wheat flour, salt, and hot water.
If you don't want to use hot water, you can use room temperature water.
Add also cold water.

Then knead the dough, a little soft.

Transfer the dough to the mat and roll it into a long strip.
Cut into 18 parts.

Knead each portion of dough.
Set aside when done, do not put the dough too close to each other. You can also use two hands to round it out, it's fast.
Brush the surface with cooking oil, cover, and let the dough rest for 1 hour.

After 1 hour, take out the dough and roll it into a larger sheet.
Brush the top of the dough sheet with a layer of cooking oil, put another dough sheet on top, then brush with another layer of cooking oil and put another dough sheet on top.
Repeat with a set of 6 dough pieces folded.

Pinch the edges of the folded pieces together so that they don't get misplaced easily when rolling.
Press the dough with a rolling pin first, then roll it out.

Roll it bigger, flip it over, and keep rolling it so it's more even.
Turn it over and continue rolling until it is about 15cm in diameter.
Use a rolling pin to put it into the pan more easily.

Heat on medium-high heat and put in a pan.
Heat until bubbly and cooked, turn over.

The first lavash bread is done, it is easy to tear off, tear off the bread and cover it with a towel.
Then flip it over and tear off the second piece.
Turn over and tear off the third piece.

The next one will be cooked by the time you tear the pastry, so flip it over and tear the next one when you're done.
