Tuna & Avocado Tomato Salad Stack is a light dinner for any occasion. This salad will help to keep you fit and keep up with your diet. This perfect combination of proteins from tuna with avocado and vegetables is a delicious dish that won’t disappoint.
1CanTuna (albacore or yellowtail) in water, drained
1tsp.Mayonnaise
1/4cupCilantro, fresh, chopped
2tbsp.Lime juice (divided, one for the avocado diced, and one for the tuna mix)
1/3cupRed onion, small dice
1ea.Jalapeño pepper, seeded and diced (can use 2 if want to make it slightly spicier)
1tsp.Garlic powder
Salt to taste on each mixture (tomato mix, avocado mix, tuna mix)

Drain water from the can of tuna. In a bowl, combine tuna, mayonnaise, 1 tbsp cilantro, and 1 tbsp lime juice. Add salt to taste.

Place diced avocado in a bowl and add 1 tbsp of lime juice, leaving some chunks. Add salt to taste.

Prepare tomato mixture: In a separate bowl, combine chopped tomatoes, onion, jalapeño, a pinch of salt to taste, and garlic powder. Stir to combine.

Starting on 1 plate of the 2 servings plates (will repeat the same steps for 2nd plate) make a layer with the diced avocado, using a hamburger mold to keep the round shape of the stack. Then layer half of the tuna mixture on top of the avocado. Top with a fresh layer of the tomato mixture (pico de gallo).
