A fast and delicious solution to leftover rice – this Tomato fried rice has a rich and sweet flavor mainly from fresh tomatoes. Easy clean-up plus quick cook times make this one-pan dinner a winner.

  • 1 Fillet Chicken Breast
  • 1/2 cup Onion, diced
  • 1 cup Tomato, diced
  • 1 cup Mushroom, diced
  • 1/4 cup Carrot, diced
  • 1 tbsp. Butter
  • 1 tsp. Salt
  • 1/4 tsp. Ground Black Pepper
  • 2 tbsp. Milk
  • 1/4 cup Tomato Paste
  • 1/2 tsp. Sugar
  • 2 cup Cooked Rice
  • 1 cup Cucumber, diced

Preparation: Cut the chicken breast into small chunks.

Dice the onions, tomatoes, cucumbers, carrot, and white button mushrooms. Keep them aside.

Cooking the Chicken: Place a frying pan or pot on medium heat and add the butter. Once the butter is melted, add the chicken and onions to the pan. Stir them well until the chicken turns a creamy white color.

Adding Vegetables: Now, add the diced tomatoes, mushrooms, and carrots to the pan. Sauté the mixture for about 3 minutes or until the liquid from the tomatoes has evaporated and all the ingredients are well-mixed.

Stir in the sugar, milk, and tomato paste to the vegetable and chicken mixture, mixing well to ensure an even distribution.

Add the cooked rice to the pan and mix well until every grain of rice is combined with the tomato sauce.
