These corn cheese scones are a delicious way to put summer corn front and center. Sweet and savory, it has addictive flavor of corn and cheddar cheese. Plus, sugar glaze is the secret weapon of this recipe. You can serve these buttery scones as a side with fresh salted butter and herbs (they’ll taste just like cornbread) or with honey, cream, and jam as a dessert.

Ingredients:
  • 5.6 oz. Cake flour
  • 1.4 oz. Bread flour (you can use 200g of all-purpose flour instead)
  • 1.7 oz. Unsalted butter
  • 0.17 oz. Baking powder
  • 1.41 oz. Sugar
  • 0.4 tsp. Salt
  • 3.5 oz. Heavy cream
  • 1 oz. Egg
  • 2.4 oz. Cheddar or American cheese
  • 1.9 oz. Canned corn
  • Glaze:
  • 0.17 oz. Egg white
  • 0.52 oz. Powdered sugar
  • Extra cheddar or American cheese for topping
Directions:

Sift the cake flour, bread flour, baking powder, sugar, and salt on a workbench.

Add the cold butter cut into cubes and chop it with scrapers until the size of the butter is about a grain of rice.

Add cold heavy cream and eggs and mix as if cutting the dough using scrapers.

If you can hardly see the powder, add cheddar cheese and corn and mix lightly.

Once you roughly made a loaf, cut the dough in half, overlap them vertically, and press again. Repeat the same process three times. * This process is about making flaky scones. If you do not want to create a pie-like texture, you can just omit it.

Wrap the dough with plastic wrap and make it flat about 2cm thick.

Let the refrigerator rest for at least 1 hour until the dough hardens.

Divide the hardened dough into 6 pieces.

Mix the amount of egg white and powdered sugar to make a glaze.

Apply glaze on the top of the scones and sprinkle with extra cheddar cheese.

Using the air fryer, Bake for 15 minutes at 356 °F/180 °C, turn it over and bake for another 10 minutes. (Oven: Bake for 20 minutes at 356 °F/180 °C)
