Ingredients:
- 1 lb. salmon
- 1 tbsp sake
- 2 tbsp Mirin
- 1 tbsp soy sauce
- 1 tsp maltose
- 1 oz. garlic
- 1 oz. ginger
- 1 tbsp olive oil
- 1 oz. red bell pepper
- ½ medium lemon

Prepare marinade sauce. In a large glass bowl, add in sake, diluted maltose, Mirin, garlic, ginger, red bell pepper, and lemon juice; mix well.

Marinate salmon for 30 min.

At low to medium heat, add 1 teaspoon olive oil in a non-stick frying pan, put in salmon, and fry one side till golden brown. Turn it over and fry the other side till golden brown. Add in marinating sauce and let it simmer. Turn the salmon over occasionally till sauce thickens.
