These Szechuan Beef Short Ribs are super tasty and fall apart in your mouth tender. Seasoned with Pixian bean paste and an aromatic blend of Szechuan peppercorns, pickled chili, ginger and garlic cloves, these ribs are full of flavors!

Ingredients:
  • 2 lb. Beef ribs
  • 3 stalk Green onion
  • 6 piece Sliced Ginger
  • 2 tbsp. Cooking oil  
  • 2 tbsp. Shaoxing Wine
  • 1 tbsp. Sichuan peppercorn [Seasoning]
  • 1 oz. Rock Sugar [Seasoning]
  • 1 tbsp. Pickled Chili
  • 4 cup Water
  • 0.5 oz. Minced garlic
  • 2 oz. Minced Onion
  • 1 oz. Green & red chili pepper
  • 1 tbsp. Fermented Black Beans
  • 1 oz. Pixian bean paste [Seasoning]
  • 2 oz. Large Green Onion
  • 1 tbsp. Soy Sauce [Seasoning]
  • 1 tbsp. Fermented Soybean Paste [Seasoning]
  • 0.5 tbsp. Oyster sauce [Seasoning]
  • 2 cup Beef Broth
  • 0.1 tsp. Green onion & ginger
  • 0.1 tbsp. Water [Seasoning]
  • 0.5 oz. Bean paste [Seasoning]

Cut the large green onion slantly into 1½ inch.

Cut the green and red pepper into circles.

Finely chop the fermented black beans.

Finely chop the Pixian bean paste.

Heat the wok and then add a little bit of oil. When the oil is hot, pour it out, then place the beef rib in the wok to brown each side.

Add the seasonings blow. Then, add some water and simmer for 90 minutes. ①Green onion and ginger ②Sichuan peppercorn ③Rock candy ⑤Pickled pepper

When the rib is ready, take out the rib and pour the broth in a bowl.

Fry the rib in 250°F / 120°C hot oil for 3-5 minutes.

Add broth and the fried rib. Mix and stew until the broth dry.

Final Notes
Pixian bean paste is called the soul of Sichuan cuisine in China. It is a reddish brown salty paste fermented from broad beans and fresh chili peppers. You can get it from most Chinese supermarket or order it on Amazon.com. For substitute, you can use equal amount of chili bean paste and adjust based on your taste.
