  • For the calamari
  • 4 count Calamari (60g / 2.1oz each)
  • 1 count Shallot (14g / 0.5oz)
  • 1 tbsp. Fish sauce
  • 1 tbsp. Light soy sauce
  • 1 tbsp. Honey
  • 1 tbsp. Lemon juice
  • 1 tbsp. Turmeric juice
  • 0.5 tsp. Five spices powder
  • 0.5 tsp. Anise powder
  • 1 pinch Ginger chopped
  • 1 pinch Freshly milled pepper
  • 2.8 oz. Clam meat
  • 1 tsp. Green onion chopped
  • 0.7 oz. Lotus seed
  • 3 count Shiitake mushrooms chopped (20g / 0.7oz each)
  • 2.8 oz. Prawn
  • 5.6 oz. Fatty pork minced
  • 0.35 oz. Glass noodles
  • 1 tbsp. Parsley
  • 1 pinch Salt, pepper
  • 1 pinch Olive oil for frying
  • For the turmeric sauce
  • 2 count Shallots (28g / 1oz)
  • 2 tbsp. Butter
  • 1 cup Clams broth
  • 1 tbsp. Honey
  • 0.5 tsp. Five spices powder
  • 3 tbsp. Turmeric juice
  • 0.88 oz. Tamarind paste
  • 1 tsp. Fish sauce
  • 1 tsp. Juice for lemon

Making the filling: In a bowl, add some ground pork. Gently mash the prawns and put them into the bowl. Add clam meat, chopped shiitake mushroom, chopped green onion, minced shallots, minced ginger, pre-cut glass noodle, lotus seeds, fish sauce, tamarind sauce, and curry powder. Mix well.

Marinating calamari: Stuff the filling inside the calamari and secure with some bamboo sticks. Quickly blanch the calamari in boiling water and take out into a plate. Add turmeric sauce, tamarind sauce, fish sauce, minced shallots, curry powder, soy sauce, honey, and lemon juice. Let it sit for 5 minutes. Steam

Put the stove on high heat. In a pan, add some butter. Put in the calamari and cook for about 10 minutes. Take out and put it aside. Add the asparagus and quickly stir-fry for a minute to make a side dish.

Making the sauce: In the same pan, add minced shallots, pour in clam stock, turmeric sauce, tamarind sauce, curry powder, fish sauce, honey, and butter. Stir well until the sauce gets thickened.

Plating: Pour a spoonful of sauce in the center of a plate. Cut the stuffed calamari in half and place it on top of the sauce. Add some asparagus and crispy rice crepe for garnishment.
