Profiteroles are small desserts but they are incredibly satisfying. Puff pastry sandwiching a scoop of light strawberry ice cream all topped off with a warm chocolate sauce. This dessert is perfect for a warm summer day!

Ingredients:
  • ㅤStrawberry Ice Cream
  • 1 pack Strawberry (1 Pint (2 Cups) Ripe Strawberries, Washed and Stemmed)
  • 1 cup Whole Milk
  • cup Heavy Cream
  • 3/4 cup Agave Syrup
  • 1/8 tsp. Salt
  • cup Lemon Juice
  • 1 cup Granulated Sugar
  • ㅤPate a Choux
  • 1 cup Water
  • 4 oz. Butter
  • 1/2 tsp. Salt
  • 1 cup All-Purpose Flour
  • 5 Large Egg
  • Chocolate Sauceㅤ
  • 1/4 cup Milk
  • cup Heavy Cream
  • 1/8 tsp. Salt
  • 8 oz. Dark Chocolate

Puree strawberries in a blender. Pass through a fine-meshed strainer to remove seeds.

Whisk together with the remaining ingredients. Taste and adjust with more salt or lemon juice if it tastes flat.

Spin in an ice cream machine until thick and the ice cream looks like soft serve, then freeze at least three hours to set.

In a pot, bring water, butter, and salt to a boil.

When water boils, turn off the heat and stir to completely melt butter.

With heat off, add flour, stirring until dough is uniform and no lumps of flour remain.

Return pot to low-medium heat and cook, stirring, three minutes until the dough starts to turn yellow and comes together into a ball.

Remove dough to the bowl, then mix in eggs, one at a time, until batter is smooth and forms soft peaks. You may not add all 5 eggs, depending on the consistency of the dough.

Pipe into rounds on a sheet pan covered with parchment (or a silicone baking mat), making sure to leave 2” in between puffs.

To bake, put in preheated 200°C / 400°F oven for ten minutes, then lower to 170°C / 325°F to finish baking, approximately ten more minutes.

To test for doneness, break open a cream puff to make sure it’s completely baked inside. Cream puffs will feel light when they are done.

Cool, then cut in half to fill with ice cream.

Bring cream, milk, & salt to a simmer.

Chop chocolate into small pieces.

Pour hot milk & cream mix over chocolate, let stand one minute, then stir to combine. Serve immediately or store in fridge up to one week and warm to serve.
