This Stir-Fry Pork Ribs with Shallot and Celery in Salt and Pepper flavor is so aromatic and addictive that you will want it over and over again.

Ingredients:
  • 1.5 lb. Pork Ribs
  • 0.5 cup Scallion
  • 0.5 cup Ginger
  • 0.33 cup Garlic
  • 0.5 cup Shallot
  • 0.5 cup Celery
  • 2 tbsp. Soy sauce
  • 0.5 tsp. Salt
  • 1 tbsp. Sugar
  • 1 tbsp. Sichuan peppercorn
  • 1 tsp. Salt
  • 0.25 cup Cornstarch
  • 0.25 cup Cooking oil (For Sautee)
  • 2 tbsp. Cooking oil (For Stir-fry)
  • 0.25 cup Dried Chili
  • 2 tbsp. Cooking wine

Cut the pork ribs into 2 inch long pieces.

Clean the chopped ribs in water. Drain well and transfer to a large bowl.

In the same large bowl, add sliced ginger, chopped scallion and diced garlic. Whisk in soy sauce. Seasoning with salt and sugar. Mix well and marinate for 30 minutes.

Warm up a small skillet, turn to medium heat, add Sichuan peppercorn. Fry until smell the scent. Transfer to a small bowl, add some salt and mash it well. Set aside.

Coat the marinated ribs with cornstarch. Transfer to a large skillet.

Heat up the large skillet to medium heat, add cooking oil and ribs. Roast the ribs until turn to golden brown. Transfer to a plate. Set aside.

In the large pan, turn up to high heat, add dried chili, scallion, ginger, shallot and celery. Stir-fry for a while.

After you smell sauté, sprinkle the crushed peppercorn, put in the cooked ribs, whisk in cooking wine and fry well.
