Ingredients:
  • 12 oz. All-Purpose Flour [Noodle]
  • 1 cup Water [Noodle]
  • 1 tsp. Salt [Noodle]
  • 0.1 tbsp. Cooking oil [Noodle]
  • 1 oz. Cabbage, Shredded
  • 1 oz. Carrot, Julienned
  • 0.5 cup Bean Sprout
  • 10 oz. Beef, Shredded
  • 2 stalks Green Onion, Cut Into 1 Inch Long Pieces
  • 0.5 tbsp. Garlic, Minced
  • 1.5 tbsp. Soy Sauce
  • 1 tsp. Peppercorn Oil
  • 1 tsp. Black Pepper Powder
  • 0.5 tsp. Sugar, To Taste

Mix flour, salt and water, knead into a dough. Cover dough and set aside for 30 minutes. Then knead the dough again until the surface is smooth.

Divide it into 4 equal pieces.

Roll each piece into an oval-shaped thick piece.

Brush oil on top and stack them together. Then cover and refrigerate for 2 hours.

Take out from refrigerator, roll out an oval piece along long side until it is about 1 foot long. press roller along the centerline to make it thinner. Using both hands carefully pull both ends of a flat piece out and swing it up and down making it thinner and thinner.

Drop long noodles into a pot of boiling water. Cook until the noodles are al dente and still have some bite. Then take noodles out and rinse under running cold water. (This will stop the cooking process and keep the noodle from over-cook.)

In a large wok over high heat, add two tbsp cooking oil, and stir fry beef until done.

Add garlic and green onion until fragrant, then add cabbage and carrots. Stir well.

Add noodles, soy sauce, sugar, white pepper, bean sprouts, black pepper, and peppercorn oil. Stir to cook for a while.
