Stir-Fried Shredded Pork With Squid is a traditional Taiwanese Hakka-style stir-fry that’s delicious and full of flavor.

Ingredients:
  • 10 oz. Pork Belly
  • 3 oz. Tofu Bean Curd
  • 3 oz. Dried Squid (soaked in cold water for 1 hour)
  • Seasoning
  • 0.5 tbsp. Minced Garlic
  • 1 tbsp. Soy Sauce
  • 0.5 tsp. Sugar
  • 1 tsp. Oyster Sauce
  • 1 tsp. Sweet Black Rice Vinegar
  • 2 tbsp. Shaoxing wine
  • 0.5 cup Water
  • 3 oz. Chinese Celery
  • 3 oz. Green Garlic
  • 0.25 cup Sliced red chili pepper in round shape

Soak dried squid in water for one hour.

Slice soaked squid into thin strips.

Cut pork belly into thick slices, then cut into strips about the same length as cuttlefish strips.

Cut Chinese celery into 1.5-inch long strips.

Cut bean curd into thin strips.

Shred green garlic and slice red chili pepper.

In a wok over high heat, add oil and stir-fry pork strips until sizzling and golden.  (Note: at this point, the meat is very crispy).

Add bean curd strips and stir fry to mix well; add squid strips and continue to stir-fry. Then add garlic, sweet black rice vinegar, sugar, oyster sauce, soy sauce, and water while stirring.

Add Chinese celery, green garlic, and red chili pepper slices. Quickly stir several times.
