Typhoon shelter” is a signature style of cooking originated from Hong Kong, featuring a golden breadcrumb coating. It has a variety of tastes: crispy bread crumbs, crunchy garlic crisps, savory soybeans, and a bit of spiciness from the dried chillies.

Ingredients:
  • 2 lb. Lobsters (Shell on – Head on)
  • 2 tbsp. Corn Starch
  • 7 oz. Garlic, chopped (for bread crumbs mixture)
  • 1 cup Bread crumbs (for bread crumbs mixture)
  • 3 lb. Pork ribs
  • Rib Marinade
  • 1 tsp. Salt
  • 1 tbsp. Garlic powder
  • 1 tsp. Five spice powder
  • 1 pinch Paprika
  • 1 tsp. Brown sugar
  • 1 tsp. Brandy
  • 1 tsp. Special soy sauce
  • 1.5 tbsp. Hoisin sauce
  • Stir-fry seasoning
  • 2 oz. Red and Green bell pepper
  • 2 tbsp. Fermented black beans (Douchi)
  • 1 pinch Salt
  • 1 pinch Chilli flakes, chopped
  • 3.5 oz. Bread crumbs mixture
  • 1 pinch White sesame

Split the lobster lengthwise from the head portion to the end of the tail, so you have two halves. Clean it up and strew with two tablespoons of corn starch. Flour is important as it prevents oil splashes and locks the water in which keeps the meat fresh.

Chop the pork rib into medium sized pieces. In a large bowl with ribs, add salt, garlic powder, five spice powder, paprika, brown sugar, brandy, special soy sauce and hoisin sauce. Mix them thoroughly, and marinade for 2 hours. (All these ingredients help to season the pork rib and give it a juicy texture & spicy savor.)

In a heated oil pan, fry the minced garlic and breadcrumbs over high temp. Use a paper towel to drain the grease for five minutes.

In a hot wok with cold oil, add the lobsters to the pan and stir-fry until it turn bright red. It just takes one to two minutes to stir fry the lobsters. Do not over-fry the lobster because it causes breakage on the shell part.

Put the seasoned pork ribs in to fry (oil temp: 210°F/100°c) for 9 minutes where it turns into a golden brown color and drain the oil.

In a large wok, add green & red pepper, fermented black beans, salt, chopped chills, fried garlic powder & bread crumbs, and white sesame. Stir-fry the ingredients until fragrant and add fried pork ribs, lobster to the wok. Toss the whole mixture for one minute to mix up with lobster and pork ribs with spices.
