These deep-fried tofu are stuffed with a filling made with minced pork, shrimp, ginger, green onion, soy sauce and sesame oil, and drizzled with an umami-packed sauce to create a decadent flavor.

Ingredients:
  • 1 lb Firm Tofu
  • 5 oz Ground Pork
  • 3 oz Shrimp, Minced
  • For the Marinade:
  • 1 tbsp Ginger, Minced
  • 1 tbsp Green Onion, Finely Chopped
  • 1 tbsp Shaoxing Wine
  • 1 tbsp Soy Sauce
  • 1 tsp Sugar
  • 1 tsp Sesame Oil
  • 0.25 tsp White Pepper
  • For the Seasoning:
  • 1 tbsp Shaoxing Wine
  • 0.5 tsp Sugar
  • 0.25 tsp Five-Spice Powder
  • 1 tsp Soy Sauce
  • 3 stalks Green Onion
  • 3 pieces Sliced Ginger
  • 2 counts Star Anise
  • 1 tbsp Water + Corn Starch slurry in 1:1 ratio

Cut each tofu piece into about 1.5-inch (4 cm)cubes.

In a mixing bowl, combine ground pork, minced shrimp, and marinade ingredients. Mix thoroughly and set aside.

In a wok, bring 2~3 cups of cooking oil to 300-350°F/150-180°C. Deep-fry tofu until golden.

Remove from oil, and place in cold water to soften the tofu. (To keep the tofu submerge in water, you can put a plate on top to press down tofu.)

Using a scissor cut an x opening on one side of the tofu. Stuff the tofu with pork and shrimp mixture.

Place the stuffed tofu pieces in a plate. Then, add Shaoxing wine, salt, five-spice powder, soy sauce, ginger slices, chopped green onion, and star anises.

Steam for 15 minutes.

Pour the juice into a cooking pan. Add water and corn starch slurry over high heat to thicken the sauce. Drizzle the sauce over the stuffed tofu.
