Ingredients:
  • 2 lb. Young whole chicken
  • 0.5 tsp. Salt
  • 0.25 cup Shaoxing wine
  • 2 tbsp. Fermented sweet rice (Jiu Niang)
  • 3 oz. Winter bamboo shoots
  • 3 oz. Virginia Ham
  • 1 tsp. Sugar (a little)
  • 2 stalks Green onion
  • 6 Slices Ginger

Cut the chicken and remove the big bones, using the knife back to pound every part of the chicken until the whole chicken becomes flat. Place it on a plate skin side up.

Marinate chicken with a pinch of salt, Shaoxing cooking wine, and fermented sweet rice (Jiu Niang) for 1 hour.

Remove the winter bamboo shoots’ skin, trim off the discolored parts, and cook the cleaned bamboo shoot in boiling water for 10 minutes to remove the bitter taste.

Remove from boiling water and cool it down a bit. Thinly slice it.

Thinly slice the ham.

Arrange the sliced ham and the sliced winter bamboo shoots alternatively on top of the chicken: in the center for about 10-12 pieces, one piece ham, then one piece bamboo shoots (total amount of ham and winter bamboo shoots depends on the size of the plate). Sprinkle with a little sugar, green onion, and ginger.
