Ingredients:
  • 5.25 oz. Chicken Breast
  • 3 cup Vegetable oil (for frying)
  • 1 tbsp. Cooking Oil
  • 1 tbsp. Minced Garlic
  • 1 tsp. Dried Chillies
  • 1 cup Green Pepper
  • 1 cup Red Pepper
  • 0.25 cup Onion, Chopped
  • 0.25 cup Green Onion, Chopped
  • Chicken Marinade
  • 1 tbsp. Sake
  • 1 tsp. Five Spices Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Szechuan Pepper Salt
  • For the coating
  • 0.25 cup Corn Starch
  • 3 Eggs, Beaten
  • 0.25 cup Sweet Potato Starch
  • Seasoning
  • 1 tbsp. Cooking Wine
  • 1 tsp. Black Pepper to Taste
  • 1 tsp. Szechuan Pepper Salt
  • 1 tsp. Cumin Powder

Slice the chicken breast into bite size strip and marinate with [Marinade]  ingredients for 10~15 minutes.

Dip chicken in potato starch, egg mixture, then corn starch. Set aside for 5 minutes.

In a wok, add cooking oil and heat oil over medium-low until thermometer registers 150-180 °C / 300-350 °F. Deep fry the chicken strip at a low temp until it turns slightly golden, turning occasionally, 4–5 minutes.

Remove chicken from the oil and bring the wok to high heat.

Re-fry the chicken at high temp to make it crispy and remove the excessive oil inside for about 40 seconds. Drain the oil and set the chicken aside.

In the wok, add cooking oil. Once oil is hot, add in garlic, dried chilies, chili pepper, onion, and green onion, and cooking wine.

Cook and stir until aroma of garlic comes out and garlic is lightly browned. Then, add black pepper to taste.

In the same wok, add the fried chicken strip, Szechuan pepper salt, and cumin powder to taste. Stir to mix well.
