Ingredients:
  • 3 lb. Chicken Legs, Scored ½-inch Deep Cut On 3 Sides
  • 3 oz. Celery
  • 3 oz. Carrot, Peeled And Cut Into 2 Inch Cubes
  • 1 lb. Potatoes, Cut Into 2 Inch Cubes
  • 0.5 cup Red Bell Peppers, Cut Into 2 Inch Cubes
  • 1 tsp. Cilantro, Finely Chopped
  • Banana Sauce
  • 1 count Apple, Peeled And Cubed
  • 1 count Banana, Peeled
  • 1 cup Water
  • Curry Sauce 1
  • 1 tbsp. Coconut Oil
  • 1 tbsp. Cloves Minced Garlic (~1 Tbsp)
  • Curry Sauce 2
  • 0.5 cup Medium Yellow Onion, Diced (~1/2 Cup)
  • 3.5 oz. Carrot, Finely Chopped
  • 3.5 oz. Celery, Finely Chopped
  • Curry Sauce 3
  • 0.25 cup Yellow Curry Powder
  • 1 tbsp. Green Onion, Chopped
  • 1 tbsp. Shaoxing Wine
  • 0.5 tsp. Freshly Cracked Balck Pepper
  • 1 tsp. Salt
  • 2 cup Water
  • Curry Sauce 4
  • 1 tbsp. Oyster Sauce
  • 1 tbsp. Honey
  • 0.5 tbsp. Soy Sauce

Score the chicken, dice the onion, mince the garlic, and mince the ginger. Thinly slice the celery and carrot into long vertical strips, and then dice those strips horizontally.

Blend [Banana Sauce]

Heat 3 cups vegetable oil in a wok or large deep skillet over medium-high heat. Fry the chicken until golden brown. Drain and set aside. Next, fry the potatoes until golden brown. Drain and set aside.

In the same wok, add the minced garlic, coconut oil, diced onion, carrot, celery, and saute for 3-5 minutes or until onions are beginning to get golden.

Lower the heat to low and add in the curry powder, green onion, shaoxing wine, salt, pepper, and water. Stir often for 2-3 minutes or until fragrant. Return the heat to medium high.

Add in fried chicken and bring to boil. Add oyster sauce, honey, soy sauce, fried potatoes, carrots, and stir often for about 4-5 minutes. Turn the heat to low and simmer for 10 minutes.

Pour in the [Banana Sauce]. Stir in red bell pepper, and cook until the curry is slightly thickened.

Serve over rice. Garnish individual plates with cilantro.
