Slow smoked to tender juicy perfection, this Smoked Whole Chicken is a delicious and affordable way to make a dinner for your entire family. Smoking the chicken over sugarcane leaves and tea leaves makes them wonderfully fragrant.

Ingredients:
  • 2 lb. Whole chicken
  • 0.5 tsp. Salt
  • 0.5 tsp. Black pepper
  • 0.5 tsp. Red chili powder
  • 2 tbsp. White wine
  • 0.5 tsp. Italian seasoning
  • 1 tsp. Five spices powder
  • 7 pieces Sliced ginger
  • 3 stalks Green onion
  • 0.5 cup Tea [smoking]
  • 0.25 cup Sugar [smoking]
  • 0.5 cup Sugarcane leaves, cut into small pieces [smoking]

Rub the entire chicken with black pepper, salt, white wine, chili powder, Italian seasoning, and five-spice powder thoroughly.

Stuff the chicken with the ginger and green onion. Let it marinate for 2 hours.

Bake directly on the rack in a grill for 1 hour.

Take the chicken out, drop tea leaves, sugarcane leaf, brown rice, and brown sugar on hot charcoal inside the grill.
