Making marinade sauce: Add in a bowl minced shallots, lemongrass, galangal, garlic,
ginger, sea salt, black pepper, brown sugar, and teriyaki sauce. Mix well.

Marinating duck breast: Add the duck breasts which have been coated on the skin
side in the bowl of marinade sauce. Rub the sauce all over the breasts and make
sure all sides are coated well. Let it sit for about 15 minutes.

Smoking duck breast: Have a smoker ready at the temperature of 60-65°C. Put some
coconut pulp in the fire for fragrance. Place the duck breasts inside and wait for 3
hours with the lid on until the duck is cooked and the surface is dry.

Plating: On a big plate, lay on a piece of banana leaf. Slice the duck breast into ⅓
inch slices. Add some alfalfa sprouts, shallots, pickled carrots, and grilled green
onions. Drizzle on some marinade sauce which has been heated up, and garnish
with basil flowers.
