This shrimp and tofu stew is a nutritious dish that will also add some vibrant colors to the dinner table. With tomatoes, tofu, shrimp and peas, the whole meal is filled with healthy ingredients that will also satisfy any cravings you may have.

Ingredients:
  • 1 pack Soft Tofu
  • 1/4 tsp. Salt
  • 1 tbsp. Cooking Oil
  • 1 tsp. Ginger, Sliced
  • 1 tbsp. Green Onion, Chopped
  • 10 medium Peeled Shrimp
  • 1 cup Tomato, Diced
  • 1 tbsp. Rice Wine
  • tbsp. Tomato Sauce
  • 1 cup Chicken Broth
  • 1/2 tsp. Salt
  • 1/2 tsp. Sugar
  • 2 tbsp. Green Peas
  • 2 tbsp. Cornstarch Slurry (1 to 2 Ratio of Cornstarch to Water)

First cut 1 box of tofu into small pieces.

Put tofu into boiling water, add salt and cook for 1-2 minutes. When removing the tofu from pot, drain the water.

Put oil in a clean skillet and stir-fry ginger slices, green onion, shrimp, tomatoes for 1 minute at medium heat.

Add rice wine, tomato sauce, chicken soup, and boil on high heat.

Then add salt. Add tofu and move them around gently with a spoon. When the soup is boiled again.

Add peas, water with corn starch to thicken the soup.
