Ingredients:
  • 7 oz. Tiger Shrimp, Peeled And Deveined
  • 4 oz. Potato, Peeled
  • 0.5 oz. Onion, Diced
  • 2 oz. Broccoli Crowns, Cut Into Small Pieces
  • 1 oz. Carrot, Sliced
  • Marinate
  • 1 count Egg White
  • 1 tsp. Salt
  • 1 tbsp. Starch
  • Sauce
  • 10 pieces Ginger
  • 1 tbsp. Fresh Garlic, Mashed
  • 3 cup Water
  • 1 tsp. Salt, To Taste
  • 1 tsp. White Pepper, To Taste
  • 0.5 count Fresh Squeezed Lemon Juice, To Taste
  • 1 tsp. Sesame Oil, To Taste
  • 2 tbsp. Cornstarch Water (2 Tbsp Cornstarch Mixed With 1 Tbsp Water)

Julienne potato as thin as possible.

Raise in cold water and drain.

In a large shallow container, sprinkle a pinch of salt, then coat with about one tbsp of starch.

Spread oil inside of the small-sized bowl

Spread one layer of prepared potato and make sure the potato strings cover the edge of the sieve. Put the same sized sieve on top to form the nest shape.

In a bowl, combine salt(a pinch), egg white and starch(about ½ tbsp) until shrimps are coated evenly.

Heat up a large amount of cooking oil for deep frying, place the sieves with potato in the hot oil, deep fry until the potato strings hold together by themselves, take out the top sieve, continue frying until it becomes slightly golden.

Then take it out. Cool on a wire. This is the bird's nest.

In a large wok, boil 3 cups of water, blanch shrimp and broccoli.

Raise with cold water and drain.

Return the clean wok to the stove, add cooking oil, garlic, ginger, onion, stir until fragrant, then add cooking wine, carrot, water, lemon juice, salt and pepper to taste, keep stirring while adding ingredients. Add blanched shrimp and broccoli mix well.

Then thicken with starch and water mixture. Finally, add about ½ tsp sesame oil.

Place the stir-fried shrimp and vegetable in the bird nest. Garnish if you prefer.
