This salad is a true rainbow of seafood, veggies, and fruits. The Mango Salad Dressing makes it delicious, super easy, and a fiesta of flavors and textures!

Ingredients:
  • 2 oz. strawberry
  • 2 oz. blueberry
  • 2 oz. banana
  • 2 oz. peach
  • 2 oz. spinach
  • 5 oz. jumbo shrimp, peeled and deveined
  • 6 large sea scallops, tough foot muscles removed
  • 10 g pine nuts
  • 10 g butter
  • 10 g garlic
  • ½ tbsp white wine
  • 1 pinch black pepper
  • 1 pinch salt
  • 150 g mango
  • ¼ cup honey
  • ½ tsp lemon

Slice strawberry, banana, and peach; set aside.

Cut mango and pour into a blender; add honey and lemon juice; blend well and pour into a glass; set aside.

Add butter and garlic in a 12-inch skillet. Add shrimp, scallop and white wine; season with salt and black pepper; flip and fry until cooked.

In a large bowl, add spinach, strawberry, blueberry, banana, peach, cooked shrimps and scallops.

Mix with mango dressing; add pine nuts.
