Fresh fishballs anyone? This seafood hot pot recipe will delight fish and seafood lovers alike. The homemade fishballs are tender, springy, and chewy with delicious pork filling. It’s not too hard to make at home, and delights children and adults alike.

Ingredients:
  • 2 lb. Clown Featherback    
  • Marinade1
  • 0.5 tsp. Salt
  • 3 counts Egg White
  • 1 cup Water
  • 1 tbsp. Corn Starch
  • 5 oz. Ground Pork
  • Marinade 2
  • 1 tbsp. Shaoxing Wine
  • 1 tbsp. Soy Sauce
  • 1 tsp. Sugar
  • 1 count Egg Yolk
  • 1 tbsp. Minced Ginger
  • 1 tbsp. Minced Green Onion
  • 0.25 tsp. White Pepper

Cut the clown featherback and take out the fish bones.

Ground the flesh into the paste.

Mix fish puree with salt, egg white, water, and corn starch. (In order to make the fish puree springy texture, it is better to gradually add water and mix in the same direction for 15 minutes.)

Mix grounded pork with Shaoxing wine, soy sauce, sugar, egg yolk, minced ginger, minced green onion, and some white pepper. Then make into meatball.

Wrap pork meatball with the seasoned fish puree and make it into the fish ball with pork ball as the filling in the middle.

Place the fishball in cold water, and cook until floating up. Then continue boiling for 5 more minutes.
