Schnitzel, originally from Germany, is a thin slice of meat that’s breaded and fried. Instead of using pork chops or chicken, we used beans to give this dish a vegan twist. Hope you enjoy it!

Ingredients:
  • Patties
  • 1.66 lb. Kidney Bean
  • to taste Salt
  • to taste Ground Black Pepper
  • tsp. Paprika Powder
  • 1/2 tsp. Turmeric Powder
  • 3 Medium Eggs
  • 1/2 cup Breadcrumb
  • 2 stalks Scallion(for Schnitzel)
  • For Schnitzel
  • 1 cup Flour
  • 2 Medium Eggs
  • 1 cup Breadcrumb
  • 2 tbsp. Olive Oil
  • Baby Potatoes
  • 1 tbsp. Olive Oil
  • 8.8 oz. Baby Potato
  • 2 stalks Scallion
  • 2 cloves Garlic
  • 2 sprigs Rosemary
  • to taste Salt
  • to taste Ground Black Pepper

Rinse the cooked kidney beans, drain, add to a medium bowl.

Mash the beans to the desired consistency.

Season with salt, black pepper, paprika and turmeric powder.

Add 3 eggs, breadcrumbs, and scallions, mix together.

Gather the patty mixture and press firmly into the patties.

Place eggs, flour and breadcrumbs into 3 plates. Coat the patties with flour, eggs and breadcrumbs; place on a different plate.

Pan-fry the dough until golden brown.

Place onto paper towels to remove excess oil.

Cut baby potatoes in half, chop scallions, and dice garlic.

Sear baby potatoes flat side down. Add scallions, garlic, and rosemary to add flavor.

Serve the schnitzel with potatoes on the side.
