This sweet and sour chicken recipe with celtuce is just like your favorite takeout food without tomato sauce but, it is seasoned with a combination of soy sauce, sweet black rice vinegar, and many more. A quick and easy recipe to work on any given occasion or on any regular day with your family or friends.

Ingredients:
  • 10 oz. Chicken Breast
  • Marinade
  • 1/4 tsp. Salt
  • 1/4 tsp. White Pepper
  • 1/2 tbsp. Shaoxing Wine
  • 1 tsp. Soy Sauce
  • 2 tbsp. Corn Starch
  • 1 Large Egg White
  • Sauce
  • 1/2 tsp. Granulated sugar
  • 1 tbsp. Light soy sauce
  • 1/2 tbsp. Shaoxing wine
  • 1 tbsp. Sweet black rice vinegar
  • 1 cup Salted chicken stock
  • 1 tbsp. Cornstarch mixture (1 To 2 Ratio Of Cornstarch To Water)
  • Frying - for the chicken
  • 2 qt. Cooking Oil
  • Stir-fry
  • 2 tbsp. Cooking Oil
  • 1 tbsp. Pickled Red Chili
  • 1/2 tbsp. Ginger, Minced
  • 1/2 tbsp. Garlic, Minced
  • 4 oz. Celtuce
  • 1 tbsp. Green Onion, Chopped
Directions:

Place chicken, salt, ground white pepper, Shaoxing wine, and soy sauce in a mixing bowl. Mix well and marinate for a couple of minutes.

Pour in the two tablespoons of cornstarch mixture and mix well.

Season the celtuce with salt and set aside.

Combine Shaoxing wine, sugar, light soy sauce, black rice vinegar, chicken stock, and remaining cornstarch mixture. Mix well and set aside.

Pour the vegetable oil into a heated wok and deep fry the chicken for 4 minutes until crisp.

Remove the oil and add two tablespoons of the heated oil. Add back the fried chicken and chopped chillis; mix well and cook for another minute.

Then add the grated ginger and garlic; cook and mix for a minute. Stir in the sliced celtuce.

Toss in chopped green onions and prepared sauce. Turn off the heat and transfer to a serving plate or bowl.

Serve immediately.
