Salt Baked Chicken — a whole chicken that is baked in hot salt and emerges exceedingly tender, juicy, and not at all salty meat. The modern convenience of an oven makes it much easier to control the cooking temperature.

Ingredients:
  • Marinade
  • 1 tbsp. Soy Sauce
  • 1 tbsp. Shaoxing Wine
  • 1 tbsp. Oyster Sauce
  • 0.25 tsp. Salt
  • 1 tsp. Five-spice Powder (Fennel, Anise, Ginger, Cinnamon, Cloves) 
  • 1 tbsp. Rock sugar 
  • 0.5 oz. Shiitake Mushroom 
  • 2 Stalks Green Onion
  • 1 Stalk Lemongrass 
  • 1 Stalk Cilantro (A Little)
  • 2 lb. Chicken, Cleaned
  • 2 lb. Coarse Sea Salt (Appropriate Amount)
  • 2 pieces Banana Leaf (Appropriate Amount)

First, marinate the chicken. Mix all kinds of marinade seasonings listed above, evenly rub this mixture onto the whole chicken. Then stuff the green onion, lemongrass, and mushrooms into the chicken belly and marinate for 2 hours.

Wrap the whole chicken with banana leaves and tie with a rope.

Put the chicken in a deep baking pan, and add the coarse sea salt to the baking pan until the whole wrapped chicken is covered with it.

Bake in a preheated oven at 350°F (180°C) for 2 hours and 30 minutes.

Crack the hard salt shell with a hammer. Push the salt aside and carefully remove the chicken; try not to tilt the chicken and spill the juices.

Unwrap the banana leaves. It’s ready to serve.
