These golden and crispy Salt and Pepper Pork Chops are the best!  Get a flavor boost from ground Sichuan peppercorn and extra aroma from the ginger, onion, and garlic.

Ingredients:
  • 1 lb. Bone-in Pork Chops, About 1-inch Thick
  • Marinate
  • 1 tbsp. Rice Wine
  • 1 tbsp. Soy Sauce
  • 1 count Egg
  • 0.25 cup Cornstarch
  • Pepper Salt
  • 2 tbsp. Sichuan Peppercorn
  • 2 tsp. Salt
  • Sauce
  • 1.5 tbsp. Garlic, Peeled And Minced
  • 2 tsp. Chinese Leek, Minced
  • 2 tsp. Green Onion, finely chopped
  • 1.5 tbsp. Red Chili Pepper, Chopped
  • 1 tbsp. Cooking Wine
  • 0.5 tbsp. Parsley, Chopped

Bake Sichuan peppercorn and salt at 200°F (100°C) for 10 minutes. Let it cool for 10 minutes. Crush the roasted Sichuan peppercorn into fine powder. Add salt, mix well, and transfer to a bowl. Set aside.

Rinse the pork chops and pat dry. With a sharp knife, cut the pork chop in half, and make a few small cuts around the band of fat. Take out your aggressions on the pork and pound it thin (less than an eighth of an inch). It should have at least doubled in area. You want your pork chop to be no more than a half inch thick, and thinner if possible.

In a large bowl, add pork chops, rice wine, soy sauce, egg, cornstarch, mix well, and toss to fully coat pork chops. Marinate in the refrigerator for about 30 minutes.

In a large pan over medium heat, heat about 3-inches deep of oil to about 350°F. Add pork chops and deep-fry, turning as needed, for about 5 to 7 minutes or until golden, crisp and cooked through. Remove pork chops from pan and drain.

Bring up the oil temp, and re-fry the pork for 15~20 seconds to make it crispy and drive off excess oil.

In a wide pan over medium heat, heat 2 tbsp oil. Add garlic, leek, green onion, and cook stirring regularly, for about 30 seconds. Add deep-fried pork chops, pepper salt mixture, white pepper, parsley, and toss for about 30-40 seconds. Serve hot.
