If you are a lover of Russian gastronomy, you can’t miss this different format of the traditional Russian Napoleon Cake. This version is very easy to make and looks like a log. It is usually made tall, with at least eight tiers (and sometimes more than 20) of alternating layers of puff pastry and custard. Inspired by the French mille-feuille, it has become a Russian national dish.

  • 17.6 Oz. Puff pastry, homemade or store-bought
  • MOUSSELINE CREAM:
  • 17.6 Oz. Whole milk
  • 2.1 Oz. Sugar
  • 1.4 Oz. Corn starch
  • 0.7 Oz. Pastry/cake flour
  • 4 Large Egg yolks
  • 5.2 Oz. Unsalted butter, at room temperature
  • 4.2 Oz. Condensed milk
  • 2 Tbsp Brandy
  • DECORATING:
  • 7 Oz. 200 g heavy cream, very cold
  • 2 Tbsp Icing sugar
  • Flowers (optional)

Prepare puff pastry.

Prepare pastry cream.

Bake puff pastry.

Beat the butter for the mousseline.

Make mousseline (cream pastry + butter).
