Pumpkin is the fall flavor we can’t get enough of. A single baking pan is all you need to enjoy beautiful fall flavors. Tender chicken paired with chunks of roasted pumpkin for a simple dish that will become a new dinnertime favorite.

Ingredients:
  • 3 lb Japanese pumpkin, remove the skin and thinly sliced
  • 5.25 oz Red onion, thinly sliced
  • 1 tbsp Cinnamon powder
  • 5.25 oz Chicken breast
  • 5 count Plum tomatoes
  • 0.1 cup Fresh basil for garnish
  • 0.1 tbsp Salt [Marinade]
  • 1 tbsp White wine [Marinade]
  • 0.1 tbsp Black pepper [Marinade]

Preheat the oven to 350°F (180°C).

Remove the skin of the pumpkin. Using half of it, cut into 0.5 inch slices. Using another half, cut into 2 inches cubes.

Cut the chicken breast into bite size cubes. Marinate with salt, black pepper, white wine, and sesame oil.

In a greased 9×13 baking dish, put a layer of sliced pumpkin in the bottom. Add sliced red onion as the 2nd layers. Add the pumpkin cubes as the 3rd layer and sprinkle some cinnamon powder.

Top with marinated chicken cubes and plum tomatoes. Bake at 350°F (180°C) for 40 minutes or until cooked thoroughly.

Sprinkle with fresh basil and let stand a few minutes before serving.
