Red yeast rice is also called as red fermented rice or red koji rice. Today, red yeast rice is used in Western countries as a food supplement as a natural remedy to help lower cholesterol levels. Chef John shares tips on making red yeast rice sauce with step by step instruction.

Ingredients:
  • 7 oz. Red Yeast Rice
  • 1 lb. Sweet Rice
  • 0.5 cup Rice Wine
  • 1 cup Fermented Rice Water (10g Dried Rice Wine Yeast Ball and 1 cup water mixture)

Grind red yeast rice into powder.

Steam the soaked sweet rice for 1 hour. Put it into a mixing bowl and let it cool to about 150°F (70°C).

In the same mixing bowl, add the red yeast rice powder on top of the rice. Then add fermented rice water, made with 10 g dried rice wine yeast ball and 1 cup water mixture, and blend completely.

Put the mixture into an airtight container. Let it ferment at room temperature ( 130°F / 50°C) for 3 to 5 days.
