Red yeast rice is a colorful addition to various Chinese dishes, is prized for its food-coloring abilities, and imparts a subtle but pleasant taste to food. This fried fish recipe is finger licking good and the sauce goes very well with the rice.

Ingredients:
  • 10 oz. 7 Star Grouper Fillets
  • 0.25 tsp. Salt [Marinade]
  • 1 count Egg White [Marinade]
  • 0.25 cup Red Yeast Rice Sauce [Marinade]
  • 1 tbsp. Corn Starch [Marinade]
  • 1 tsp. Cooking Oil [Marinade]
  • 1 tbsp. Cooking Oil [Seasoning]
  • 1 tbsp. Minced Garlic
  • 0.5 tbsp. Sesame Oil [Seasoning]
  • 0.25 cup Water [Seasoning]
  • 1 tbsp. Shaoxing Wine [Seasoning]
  • 0.5 cup Rock Sugar [Seasoning]
  • 0.25 tsp. Salt [Seasoning]

Fillet the fish and remove the skin. Then cut the fillets into 1 inch wide pieces.

In a mixing bowl, combine the fish pieces with [Marinade] ingredients.

Deep fry until slightly golden. Remove from oil and drain. Than, wait a couple of minutes to raise the temperature a little, then quickly re-fry the fish until golden. Remove from oil and drain. (Tip: re-frying at a higher temperature will make the fried food crispier and less oily.)

Return the cooking pan to heat, sauté minced garlic until fragrant, then add sesame oil, water, rock sugar, and a pinch of salt.

Stir for about a minute, add the fried fish pieces, and toss to glaze the fish pieces evenly.
