A simple yet, flavorful baked red snapper that is wrapped with banana leaves. It is then paired with a delicious and spicy lemony sauce that compliments well with fish.

Ingredients:
  • 1 1/2 lb. Silk Snapper
  • Sheet Fresh Banana Leaf
  • For the fish
  • 1/4 tsp. White Pepper
  • 1/2 Large Lemon, juice
  • 1 Stalk Lemongrass
  • 3 Slices Ginger, Sliced
  • Sauce
  • 1 1/2 tbsp. Lemon Juice
  • 1 tbsp. Granulated Sugar
  • 1 tbsp. Fish Sauce
  • 1/2 tbsp. Facing Heaven Pepper
  • 1/2 tbsp. Garlic, Minced
  • 1/2 tbsp. Ginger, Minced
  • 1 tbsp. Chopped Cilantro
  • 1/4 cup Cooking Oil
Directions:

Place the snapper at the center of the banana leaf.

Add in ground white pepper, and drizzle with half of the lemon juice, lemongrass slices, ginger slices, and lemon slices.

Wrap the snapper with the banana leaf and wrap it off with tin foil to seal.

Tie the wrap using a butcher’s twine. Bake in the oven for 30-40 minutes at 480 °F/250 °C.

Place the remaining lemon juice, granulated sugar, fish sauce, minced ginger, chopped pepper, minced garlic, cilantro, and oil in a jar. Shake well to make a sauce.

Serve the baked fish with the prepared sauce.
