Crispy, tender potatoes with bacon, eggs and onions made EASY in a cast iron pan. They are easy to whip up for breakfast or brunch.

Ingredients:
  • 4 Potatoes
  • 3 Egg
  • 0.3 cup Onion
  • 200 g Bacon
  • 1 tbsp. Olive Oil
  • 1 tbsp. Paprika
  • 1 tsp. Nutmeg
  • 0.5 cup Milk
  • 1 tbsp. Parsley
  • 1 pinch Salt
  • 1 pinch Black Pepper

Put the potatoes in the boiling water for 10 minutes. Transfer to a plate after chopping it.

Warm a large skillet to medium-high heat, add chopped potatoes, minced onion and minced bacon. Cook until it turns golden brown.

Whisk 3 large eggs in a small bowl, salt, pepper, paprika, nutmeg and milk together until light and foamy.

In the same skillet, add the beaten egg and shake the skillet gently until it forms a thin wrap like a pancake.
