Ingredients:
  • 8 oz. King mackerel
  • Marinade
  • 1/4 tsp. Salt
  • 3 stalks Green onions, cut into 1/2 inch pieces.
  • 4 slices Ginger, sliced
  • 3 tbsp. White wine
  • 1 tbsp. Lemon juice
  • Stir-fry
  • 2 tbsp. Cooking oil
  • 3 stalks Green onions, cut into 1/2 inch pieces.
  • 4 slices Ginger, sliced
  • 1/2 tsp. Salt
  • 2 tbsp. Butter
  • 3 sprigs Rosemary
  • 1/2 tsp. Ground black pepper

Marinate the fish with salt, chopped green onion, sliced ginger, white wine, and a little bit of lemon juice for about 1 hour.

Using a large cast-iron skillet over medium heat, add oil and heat about 1-2 minutes, then add ginger slices and chopped onion, stir fry for about 1 minute until fragrant. Remove ginger and green onion and add salt, and pat dry the marinated fish with a paper towel, and place it in the skillet, turn the heat to medium-low, cook each side for 2-3 minutes until golden. Add butter, rosemary, and black pepper, fry each side for about another 1-2 minutes. Done.
