Ingredients:
  • 1 lb. Chicken wings
  • Marinade
  • 1/4 tsp. Ground salt
  • 1/2 tbsp. Shaoxing wine
  • 1/8 tsp. White pepper
  • 1 large Egg white
  • tbsp. Corn starch
  • Filling
  • 1/2 half Carrot
  • 3 oz. Asparagus
  • 2 oz. Green onion
  • 2 oz. Beech mushroom
  • 2 oz. White beech mushroom
  • 2 oz. White crab mushroom
  • Deep-fry
  • 2 Qt Cooking oil
  • Stir-fry
  • 1 tbsp. Cooking oil
  • 1 oz. Garlic, sliced
  • 1 oz. Ginger, sliced
  • 1 tsp. Shaoxing wine
  • 1 cup Chicken broth
  • 1 tbsp. Oyster sauce
  • 1 tsp. Sugar
  • 1/4 tsp. Ground salt
  • 1/8 tsp. White pepper
  • 2 tbsp. Cornstarch slurry (1 to 2 ratio of cornstarch to water)
  • 1 tsp. Sesame oil

Cut off the cartilage on both sides of the chicken wings hollow them out by removing the bones.

Put the chicken wings in a bowl and add salt, Shaoxing cooking wine, white pepper, egg white, and corn starch, then mix well.

Chop the carrots, asparagus, scallions, Baiyu mushrooms, Hongxi mushrooms, and Haixian mushrooms into strips about 2 inches in length.

Insert the above ingredients into the hollowed-out chicken wings.

Pour some oil into a wok and set over medium heat. When the oil temperature reaches 250°F (120°C), add the garlic slices and fry until they become golden-brown, then scoop them up. Put in the chicken wings fry for 1 to 2 minutes.

Remove and drain the oil.

In another pot, set over medium heat, add oil, ginger slices, fried garlic slices, Shaoxing cooking wine, chicken soup, oyster sauce, sugar, salt, and white pepper.

When the soup boils, add chicken wings and keep over medium heat for 2 to 3 minutes.

Finally, pour in the cornstarch slurry and water mixture and the sesame oil, stir 2 or 3 times.
