Noodles are convenient to make for any meal and can be paired with many ingredients. Whether you’re craving seafood or pork, they complement the delicious texture of noodles. Add in some fresh vegetables and the dish will be both colorful and nutritious.

  • 7 oz. Dried Noodles
  • 4 tbsp. Cooking Oil

  • 4 oz. Pork Tenderloin
  • 1/4 tsp. Salt
  • 1 tbsp. Water
  • 1 tbsp. Egg White
  • 1 tsp. Corn Starch
  • Cook The Pork
  • 1 tbsp. Cooking Oil
  • 1/4 cup Winter Bamboo, Julienned
  • 1 cup Beech Mushroom
  • 1 tsp. Shaoxing Wine
  • 1 cup Chicken Broth
  • 1 tbsp. Oyster Sauce
  • 1/4 tsp. Sugar
  • 1/4 tsp. White Pepper
  • 1 cup Green Pepper and Red Bell Pepper
  • 3 stalks Green Onions, Cut Into 1/2 Inch Pieces.
  • 2 tbsp. Cornstarch Slurry (1 to 2 Ratio of Cornstarch to Water)
  • For The Tiger Prawns
  • 1 tbsp. Cooking Oil
  • 12 Tiger Prawns
  • 2 tbsp. Ginger, Sliced
  • 1 tsp. Shaoxing Wine
  • half Onion, Sliced
  • 1/2 cup Chicken Broth
  • 1/4 cup Carrot, Sliced
  • 2 stalks Green Onions, Cut Into 1/2 Inch Pieces.
  • 1/2 tbsp. Oyster Sauce
  • 1/4 tsp. White Pepper
  • 3 tbsp. Cornstarch Slurry (1 to 2 Ratio of Cornstarch to Water)
  • 1 cup Snap Peas
  • 1 tsp. Red Thai Chili Peppers

Cook the dried thin noodles for 5 seconds in boiling water then quickly remove from pot.

Put the nooldes in a bowl of ice cold water. Remove noodles from the iced water when they are cold and drain to dry.

In a skillet over low heat, add cooking oil. Fry the noodles until golden on both sides. Set aside the fried noodles in a serving plate

To velvet pork tenderloin, combine shredded pork tenderloin, salt, water and starch in a bowl. Mix well, set aside for 10 minutes.

In a skillet over medium heat, add cooking oil and shredded pork tenderloin, stir fry until full cooked.

Add shredded winter bamboo shoots, beech mushroom, cooking wine, chicken broth, oyster sauce, ground white pepper, shredded red and green bell pepper, green onion segments and slurry. Quickly toss and stir fry several times to mix well.

Cut the fried noodles into 4 equal-sized slices, top with the stir fried pork tenderloin mixture.

In a skillet over medium heat, add cooking oil, tiger prawns and ginger slides. Fry until the tiger prawns are golden on both sides.

Add cooking wine, shredded onion, chicken broth, sliced carrot, shredded green onion, oyster sauce. Stir fry until throughly mixed, then add hround white pepper, slurry, pea and red pepper circles. Turn up the heat to high to thicken until desired thickness is acheived.

Choose steamed processed thin noodles. Thin noodles have a better texture. Noodles must be passed through boiling water otherwise noodles will be too sticky. Be patient while frying the noodles over low heat. Make noodles are sure fully cooked until golden on both sides otherwise the noodles will be too greasy. Leave enough broth in the shrimp and vegatable mixture, to make sure the noodles are well-soaked in the sauce. Thus, the noodles have the best texture. If you cannot find shredded pork at the supermarket or you are not comfortable to cut them by yourself, you can use ground pork instead.
