Eggplant slices topped with cheese, tomato paste on the bottom, these simple bites make the great healthy low-carb meal. It’s a delicious way to enjoy the favorite flavors of typical pizza without all the carbs!

Ingredients:
  • 1 count Eggplant
  • 2 tbsp. Flour
  • 2 count Eggs
  • 1 tbsp. Water
  • 0.5 cup Bread crumbs
  • 1.5 tbsp. Oregano
  • 1.5 tbsp. Basil
  • 1 tbsp. Thyme
  • 2 tbsp. Olive oil [For saute]
  • 6 clove Garlic
  • 0.5 cup Onion
  • 2 tbsp. Red pepper flakes
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 cup Strained tomatoes
  • 1 cup Mozzarella cheese
  • 1 cup Parmesan cheese
  • 0.3 cup Basil [For sauce]

Sliced the eggplant, seasoning with salt on both sides for 10 minutes. Set aside.

Prepare a small bowl of flour. In another bowl, whisk 3 eggs. Another one adding bread crumbs, oregano, thyme and in.

Set 3 bowls on the table. First, dip chopped eggplant both sides of flour. Second, dip in the egg wash. Then, dip the mixed bread crumbs.

In a large baking tray, place on the parchment paper and chopped eggplant. Add olive oil. Transfer to an oven, bake at 375°F (180°C) for 30 minutes.

In a large pot, warm up with medium-high heat, add olive oil, minced garlic, minced onion, red pepper flakes and strained tomatoes. Seasoning with salt and pepper simmer for 10 minutes. Add minced basil. Mix well, place the sauce in a baking tray, add baked eggplant in, glaze the sauce on top, sprinkle the shredded cheese. Transfer to the oven, bake at 375°F (180°C) for 10 minutes.
