This healthy and tasty seafood dish with steamed egg whites can be made from a wide range of seafood. Choose any lobster, crab meat, or clam for a quick, delicious main course.

Ingredients:
  • 2 lb. Lobster
  • 10 large Egg white
  • 200 ml Milk
  • 250 ml Chicken broth
  • 150 g Broccoli
  • 1 tsp. Cornstarch
  • 0.25 cup Ginger
  • 0.33 cup Scallion
  • 1 tsp. Chinese cooking wine
  • 1 tbsp. Cooking oil
  • 0.25 tsp. Salt, to taste
  • 2 tsp. Crab butter (for Garnish)

Clean the lobster (Use brush if possible). Blanch it in the boiling water for 1~2 minutes. Drain and place it in ice water to chill.

Cut it into pieces. Peel it and dice it into bite size cubes.

Coat all the lobster meat pieces with cornstarch and salt. Set aside.

In a large bowl, whisk in egg white, milk, and chicken broth. Pour the mixture in a large serving plate.

Steam the egg white mixture for 10 minutes, until the egg whites take on a jelly-like texture.

In a heated work, add oil, ginger slices, green onion, and stir fry until fragrant. Then, add in chicken broth, cooking wine, and blanch the lobster in the hot broth for 4 to 5 seconds. Drain and get ready to plate. Keep the remaining broth.

Place the lobster shells on the steamed egg. Garnish with Broccoli. Spread the lobster meat around it on the top.

Thicken the remaining broth with cornstarch.

Pour the broth over the lobster meat.

Sprinkle the crab butter on the top as the final step. Enjoy!

When steaming the egg white mixture, preheat the pan for 3 minutes ahead will help retain the smooth texture. So, the steamed egg tastes just like silken tofu.
