Ingredients:
  • Lobster Broth
  • 3 qt Boiling water
  • 1/2 large Yellow onion
  • 1 stalks Carrot
  • 1/2 stalk Celery
  • 1 tbsp. Whole black peppercorn
  • 1 tbsp. Salt
  • 1 large Lobster
  • For Bake
  • 1/2 large Yellow onion
  • 1 stalk Carrot
  • 1/2 stalk Celery
  • 1 large Garlic
  • 5 slices Bay leaves
  • For The Soup
  • 2 tbsp. Tomato paste
  • 1/4 cup Brandy
  • Qt Water
  • Risotto
  • 3 tbsp. Extra virgin olive oil, divided
  • 1 medium Shallot
  • 1 cup Carnaroli rice
  • 1/4 tsp. Salt
  • 1/4 tsp. Ground black pepper
  • 4 cup [Lobster Broth]
  • 1 sprig Tarragon leaves
  • Stir-fry Lobster Meat
  • 1 tbsp. Butter
  • 1 large Lobster Meat
  • 1/8 tsp. Salt
  • 1/8 tsp. Ground black pepper

In a large pan add water, when the water is boiling add carrots, celery, onions, whole black peppercorn, salt, and lobster. Cover with the lid, and cook for 4min.

Put the lobster in the ice water.

Remove the claws, shell of the head, and cut the lobster in half.

Put all the meat in a bow.

Preheat the oven at 350°F/177°C.

Put all the shell in a baking pan, add garlic, fresh bay leaves, carrots, celery, onions, bay leaves, and the garlic cloves.

Bake for 15 min.

Put the roasted shells in a pot with carrots, celery, onions, bay leaves, and the garlic cloves, toasted together with the tomato paste, add the brandy and water simmer for 40min, remove the shells and the bay leaves,

In a small casserole heat it up with the 2 tbsp extra virgin olive oil and add the finely chopped shallots, add the Carnaroli rice.

Season with salt and pepper, add the lobster broth, continuing stirring until the rice rich the al dente texture.

Add some of the lobster cut and tarragon leaves.

Sauté the lobster meat in a skillet with butter and season with salt and pepper.

Add 1 tbsp Extra virgin olive oil to the Risotto.
