Ingredients:
  • 3 to 4 6-8 oz. Salmon
  • 2 tbsp. Olive oil
  • Marinade
  • 4 tbsp. Olive oil
  • 3 cloves Garlic, chopped
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 2 tsp. Lime zest
  • 4 tbsp. Lime juice
  • Coconut rice
  • cups Jasmin rice
  • cup Canned coconut milk
  • cup Coconut water
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • Avocado Mango Salsa
  • 1 large Mango
  • 1 cup Red bell pepper
  • 1/2 cup Cilantro
  • 1 large Avocado
  • 1/2 ea. Red onion
  • 1 tbsp. Coconut water
  • 1 tbsp. Sesame oil
  • tbsp. Lime juice
  • 1 tsp. Salt
  • 1/2 tsp. Pepper

Whisk together lime juice and zest, garlic, olive oil, salt, and pepper. Mix all over the salmon filets and let marinate for 30-40 minutes.

While the salmon marinates we can start our coconut rice. Start by washing our rice under cold water. Sautee rice for 1 min then add our coconut milk, coconut water, salt and pepper. Once it comes to a boil, reduce the heat to a simmer and let cook for 20 minutes.

Peel and cut our mango and fine dice and dispose of the core. Fine dice our red bell pepper, onion, avocados, cilantro. In a mixing bowl combine all ingredients with lime juice, coconut water, oil and salt and pepper and let marinate while rice is cooking.

In a skillet heat up some oil. Salt and Pepper our salmon and carefully place in a pan and cook to the desired temperature.

Plate the rice and salmon and put the avocado mango salso on top of salmon with a side of lime wedges if you want more citrus.
