Banana pudding is made as healthy as we can. Using less fat and less sugar can still produce a nice homemade egg custard dessert that tastes even better eaten the next day. Brings back memories from my childhood.

Ingredients:
  • Banana Pudding
  • 1/2 cup Sugar
  • 3 tbsp. Cornstarch
  • 1/4 tsp. Salt
  • 2 cup 2% Milk, cold
  • 4 ea. Eggs
  • 2 tsp. Vanilla extract
  • 3 ea. Ripe bananas, thinly sliced
  • 3040 ea. Sugar-free vanilla wafers
  • Garnish
  • 1 Pack Whipped cream

In a medium saucepan, combine sugar, cornstarch, and salt. Whisk in the milk and turn on the heat to medium-high, whisking constantly. When the pudding starts to simmer, remove it from heat.

In a medium bowl, whisk the eggs together.

Gently pour 1/2 cup warmed milk into the eggs, whisking constantly. Repeat with another 1/2 cup.

Transfer the egg mix to the saucepan and cook over medium heat until thickened to desired consistency, whisking constantly.

Remove from heat and whisk in vanilla extract completely. Allow cooling.

In a casserole dish, spread a layer of pudding on the bottom.

Place half the vanilla wafers on top, half the bananas. Repeat again and finish with any remaining pudding.

Garnish with whipped cream. Enjoy!
