Ingredients:
  • 12 oz. High Gluten Wheat Flour
  • 0.5 tsp. Salt
  • 0.75 cup Water
  • 0.25 tsp. Yeast
  • 0.25 tsp. Baking Powder
  • 1 tbsp. High Gluten Wheat Flour

Combine high gluten wheat flour, water, and salt to make a dough.

Fill a large container(bowl) with cold water, knead the dough in the water, change the water when it gets milky. Repeat this for 7 to 8 times until the water is clear.

Transfer the dough to a working surface. Add ¼ tsp yeast, ¼ tsp baking powder, 2 tbsp high gluten wheat flour and knead into the gluten dough. Wrap with plastic wrapper and let the dough rest for 24 hours.

Place the gluten dough on a plate and steam in a steaming basket for 15 minutes.

The volume of the gluten dough will double after steaming. This is the Kau Fu.
