With smooth surface and a crispy texture, these fried gluten balls are made from deep-fried dehydrated wheat gluten. Chef John shares tips on how to make them at home.

  • 12 oz. High Gluten Wheat Flour
  • 0.75 cup Water
  • 0.25 tsp. Salt
  • 0.25 tsp. Yeast
  • 0.25 tsp. Baking Powder
  • 2 tbsp. High Gluten Wheat Flour

Combine high gluten wheat flour, water, and salt to make a dough.

Fill a large container(bowl) with cold water, knead the dough in the water, change the water when it’s milky. Repeat this until the water is clear.

Knead yeast, baking powder, high gluten wheat flour into the gluten dough, then let the dough rest for 1 hour.

Cut the gluten dough into small pieces, then roll them into about 1.5-inch balls.

In a cooking pan over high heat, bring enough cooking oil to 180-200°F (80-100°C), and deep fry the gluten ball until golden. Remove from oil and drain.
