Today, I made a macaroon with a rich strawberry flavor using Valrhona Inspiration Strawberry Chocolate!

Ingredients:
  • 2.3 oz. Egg White
  • 2.3 oz. Granulated Sugar
  • 3.1 oz. Powdered sugar
  • 3.1 oz. Almond flour
  • 4.9 oz. Valrhona strawberry inspiration
  • 2.5 oz. Strawberry puree
  • 0.7 oz. Corn syrup
Directions:

Divide the sugar three times into cold whites and make a hard meringue with sharp horns.

Put almond powder + sugar powder into the finished meringue and fold lightly with a spatula.

Do ‘Macaronage’ the batter spread like a tap on the side of the bowl.

Pipe it into a circle with a diameter of 3.2 ~ 3.3cm. Spread the batter by tapping the plate so that it spreads to the desired diameter and thickness.

Dry it until the surface dries for 30 minutes~ one hour.

Bake at 302 °F/150 °C for 10 minutes. (Unox Convection Oven)

Baked macaroni shells should be completely cooled and then removed from the sheet.

Strawberry flavor ganache: In a large cup, melt the Valrhona Inspiration strawberry to 105-120°F/40~50°C.

Add strawberry puree to the melted strawberry and corn syrup heated to 105-120°F/40~50°C and emulsify with an Immersion blender.

Cover with a plastic wrap so that it does not come in contact with the air, and then set until it has a good texture to pipe out. *In the video, I piped it out after hardening for about 2 hours. But I recommend letting it sit overnight because it has a better consistency and texture to pipe out.
