Ingredients:
  • 6.3 oz. Soft flour
  • 1.7 oz. Cocoa powder
  • 8.8 oz. Sugar
  • 1 tsp. Baking powder
  • 0.5 tsp. Baking soda
  • 6 Large Eggs
  • 1 tsp. Vanilla extract
  • 2.4 oz. Butter
  • Mousse
  • 8.8 oz. Dark chocolate coverture
  • 0.7 cup Fresh cream
  • Glaze
  • 0.15 cup Water
  • 5 tsp. Fresh cream
  • 0.7 oz. Cocoa powder
  • 1.5 oz. Sugar
  • 0.8 tsp. Gelatin
Directions:

Break the eggs into a big bowl and whip them with a hand mixer.

Whip it until the eggs are white and foamy.

Sift the flour, baking soda, and baking powder into it. Sift also the cocoa powder.

Mix them into the dough.

Melt the butter. Add a little bit of the dough to the melted butter and mix it.

Add this mixture back to the dough and mix it thoroughly.

Put the parchment paper into the baking dish and pour the batter into it.

Bake at 350 °F/180 °C for 30-40 minutes.

Cut the dough into 3 pieces.

Cut the chocolate into smaller chunks.

Add cream to a small pot and heat until boiling.

Add the chocolate chunks into a bowl. Sift cocoa powder into this bowl.

Pour the warm cream into the bowl with the chocolate and mix until well combined.

Add whipping cream and sugar to a bowl and whip it until hard.

Add melted chocolate to the whipped cream and mix with a mixer until it is mixed properly.

Take a mold and put a layer of dough and a layer of mousse cream on each other until the cream is the final layer.

Soak the gelatin in cold water.

Add water, fresh cream, cocoa powder, and sugar to the pot. Turn on the heat and mix them until well combined.
