Knife-cut noodles, also known as Dao Xiao Mian in Chinese, are legendary in China. It is a specialty of the Shanxi province. Chef Bao shares tips on making these delicious handmade noodles from scratch.

Ingredients:
  • 1 bowl Flour
  • 2 count Eggs
  • 0.5 cup Red Onion
  • 1 bundle Bok Choy
  • 1 tbsp. White Wine
  • 0.5 cup Tomato
  • 1 tbsp. Tomato Paste
  • 0.5 cup Chicken Broth
  • 2 tsp. Soy Sauce
  • 2 tbsp. Olive Oil
  • 1 pinch Salt
  • 1 pinch Black Pepper

Pour some water on the flour and sprinkle some salt to make it tender. Knead the flour into dough shaped like a small pillow. Set aside for 30 minutes.

Use a large blade slice the dough into noodles.

Cook the noodles in boiling water. Drain the noodles and transfer to a plate.

In a large skillet, heat up at medium-high heat, add olive oil, chopped red onion and scramble eggs. Fry for a while, add bok choy, chopped tomato. Seasoning with salt and pepper. Whisk some white wine and tomato paste.

Pour the chicken broth in the skillet, add the sliced noodles, soy sauce and stir-fry until cooked well.
