Kimchi can be pungent and sour tasting, but its flavors don’t just stop at sour. Kimchi can be sweet, umami, and spicy. From stews to omelette, these recipes with Kimchi prove just how versatile kimchi is and how kimchi makes everything taste so good!!

Ingredients:
  • For the Kimchi Omelet
  • 4 large Eggs
  • 2 tbsp. Water
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 6 g Sliced green onion
  • 1 cup Sliced iikim kimchi
  • 1 tsp. Sugar
  • 1 tsp. Sesame oil
  • For the Braised Kimchi Tofu Fish
  • 1 Corbina
  • 1/2 tofu
  • 120 g iikim kimchi
  • 1 tsp. ground ginger
  • 2 tsp. ground garlic
  • 1 tsp. sliced green onion
  • 1/2 tsp. salt
  • 1/2 tsp. flour
  • 3 tsp. cooking oil
  • 1/2 tsp. sesame oil
  • 1/2 parsley (for garnish)
  • For the sauce:
  • 2 tbsp. light soy sauce
  • 1.5 tbsp. Korean red chili paste
  • 1.5 tbsp. sugar
  • 1 tsp. soju (or beer)
  • 250 ml water
Directions:

Kimchi Omelette: In a bowl, mix the eggs, water, salt and pepper. Then, roast iikim kimchi, removed of liquid, with a little cooking oil in a pan, over a medium heat. Apply adequate amounts of sugar and sesame oil while roasting. Fry an adequate amount of mixed eggs in a pan and top with some kimchi before the fried eggs are fully cooked.

Roll the fried eggs to make a kimchi omelet. Make a kimchi omelet with the rest of the materials in the same way. Cool the kimchi omelet for five minutes and cut into 2cm slices to eat.

Braised Kimchi Tofu Fish: For better seasoning, make two cuts on each side of the fish and apply salt. Wait for 10 minutes. Apply flour thinly on the fish and fry on the pan until the color turns a golden brown.

Remove some of the oil in the pan and roast ground ginger and ground garlic over a low heat. Then add soy sauce and roast over a medium heat. Bring the fish to boil in 10 minutes over low heat. Flip over the fish to heat again before moving to another dish.

Put tofu in a pan to boil down the remaining sauce. Complete by topping tofu sauce on the fish and then adding sesame oil and sliced green onion!
