A herbaceous dish prepared with handmade fettuccine. This white wine tomato paste is easy to make, incredibly flavorful and so delicious!

Ingredients:
  • FOR THE PASTA DOUGH
  • 2 cup Flour
  • 2 medium Eggs
  • 1 tsp. Salt
  • 2 tbsp. Water
  • FOR THE SAUCE
  • 2 tbsp. Olive Oil
  • 4 cloves Garlic
  • 1 stalk Scallions
  • 1 cup Grape Tomatoes
  • to taste Salt
  • to taste Black Pepper
  • 1 tsp. Red Pepper Flakes
  • 1/4 cup White Wine
  • 1/2 tsp. Fresh Thyme
  • 1 tsp. Fresh Oregano
  • 1/3 cup Fresh Parsley, coarsely chopped
  • 2 tsp. Fish Sauce
  • 1/3 cup Basil, coarsely chopped (Divided)
  • 1/2 tbsp. Fresh Lemon Juice
  • 1/4 cup Starchy Pasta Water
  • FOR THE NOODLES
  • 1 tsp. Salt

Pile flour over a clean surface, create a deep well in the center and crack the eggs into it, sprinkle salt and then combine the ingredients using your fingertips.

Add 2-3 tablespoons of water and knead to form a dough, shape the dough into a ball.

Cover dough with a large bowl and let it rest for 15 minutes.

Once ready, roll out the dough into a large thin sheet.

Use a pizza cutter or sharp knife to slice the dough into 1-cm wide noodles.

Chop garlic and scallions. Cut tomatoes in half. Chop parsley, basil, oregano and thyme.

Heat olive oil in a skillet over medium heat, cook garlic and scallions until fragrant

Add in halved tomatoes. Season with salt, pepper and red pepper flakes.

Pour in white wine, let it heat up until bubbles form but not yet boiling, flambé by igniting the alcohol with a lighter, simmer until the flames are gone.

Add chopped thyme, oregano, parsley, stir to combine. Add fish sauce and the juice of half a lemon.

Bring a large pot of water to a boil, season with salt and cook the pasta until al dente, about 3 minutes.

Add half of the fresh basil to the sauce, add in pasta and half a cup of starchy pasta water, Sprinkle the remaining basil.
