A Valencian dish from the 1800s, Paella is a pillar of Spanish gastronomy, part of Spanish soul and its people. In this interactive class, you will learn how to create this famous dish known for its deep levels of flavor, signature golden saffron hue, and infinite combinations. You will also learn the create the base sofrito and flavorful stocks needed in order to master the perfect Paella.

Paella is a versatile dish that begs to be shared with a large gathering of friends or family. No experience is required, and we will provide all the equipment and ingredients and will explain where you can obtain these ingredients to make at home. This class is designed to be equally as fun for the serious enthusiast just as for the casual observer. You will work with other students in groups of 4 to ensure each student gets to experience all the excitement!

Ingredients:
  • Lobster Stock
  • 1 tsp. Cooking Oil
  • 1 cup Shrimp Shells
  • 1 Large Lobster
  • 1 Red Bell Pepper
  • 1 medium Carrot
  • 1 medium Onion
  • 2 Garlic Cloves
  • 5 Ginger, Sliced
  • 1 tbsp. Tomato Paste
  • 1/2 cup White Wine
  • 1/2 half Lemon Zest
  • 1 Bay Leaf
  • 2 Fresh Thyme
  • 1 tbsp. Whole Black Peppercorn
  • 2 cup Stock
  • 1 cup Water
  • 1 tsp. Paprika Powder
  • Paprika Oil
  • 1 cup Cooking Oil
  • 4 cloves Garlic
  • 1 Bay Leaf
  • 2 sprigs Thyme
  • 1 tsp. Whole Black Peppercorn
  • 1/2 half Lemon Zest
  • 3 tbsp. Paprika Powder
  • 【Sofrito Sauce】
  • 1 tbsp. Cooking Oil
  • 1 Large Onion, diced
  • 1 Red Bell Pepper, Diced
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1 tbsp. Garlic, chopped
  • 2 tbsp. Tomato Paste
  • 1 Medium Tomato, diced
  • Aioli
  • 2 Large Egg Yolk
  • 2 Cloves Garlic
  • 1 large Lemon, Juiced
  • 1 tbsp. Water
  • 1 tsp. Salt
  • 2 tbsp. Cooking Oil
  • Calamari
  • 7 oz. Calamari
  • 1 tbsp. [Paprika Oil]
  • 1 tsp. Salt
  • 1 tbsp. Cooking Oil
  • Paella
  • 1 cup [Sofrito Sauce]
  • 4 oz. Bomba Rice
  • 6 threads Saffron
  • 1/2 Red Bell Pepper, sliced
  • 10 oz. Jumbo Shrimp
  • 1 Qt [Lobster Stock]
  • Garnish
  • 1/2 cup Celery Hearts
Directions:

【Lobster Stock】First clean lobster, and then take off the shell. add cooking oil in the pan, stir fry lobster shell, lobster head and meat.

Add a little bit cooking oil, shrimp shells, lobster, bell pepper, carrot, onion. stir fry together. Add sliced ginger and garlic, tomato sauce, stir fry.

Add white wine, lemon zest, bay leaf, thyme, black peppercorn, stir to mix.

Then add chicken broth ( you can add water or vegetable soup per your reference) to cover the food.

Add a little bit paprika powder. put on the lid. cook over high heat until boiling then turn to low-heat, simmering for 2 hours

【Paprika Oil】Add some cooking oil in the pan, heat the oil and add garlic to cook.

Add bay leaf, thyme, whole black peppercorn, and lemon zest mix to cook for 1-2 mins.

Turn off the fire. add some paprika powder. mix and wait for later use

【Sofrito Sauce】Add some cooking oil and heat, then add onion, stir,

Add diced red bell pepper, stir; add some salt, black pepper, mix. add chopped garlic. stir until onion cooked well or turn to golden.

Then add tomato paste, and diced tomatoes sautés for 15 mins to make [Sofrito Sauce].

【Aioli】Add two egg york, garlic, one lemon juice, water, salt, and cooking oil in a blender.

Blend until it turns to paste then pour out for later use.

【Calamari】Heat cooking oil in a cast iron skillet.
ㅤ

In a bowl add [Paprika Oil], salt, black pepper, mix well with fresh calamari.

Cook until 80% done(less than 2 min). then take out of the skillet.

【Paella】Heat the wok, pour [Sofrito Sauce] , bomba rice, saffron, broth, mix them well together.

Add diced red bell pepper and shrimp, broth. slow cook over a medium heat for 30 mins. Check constantly while slow cooking to add more broth.

Garnish with calamari, lobster, celery heart.

Drizzle [Paprika Oil], salt, black pepper over the shrimp and lobster.

Turn off the heat. Leave the food in the pan for 3-4 mins.

Sprinkle some sesame oil over the rice and a little bit [Aioli].
